614. Convenablement préparées, les olives, comme les noix, remplacent avantageusement le beurre et la viande. Elles contiennent une huile bien préférable à la graisse animale. L’huile d’olive est laxative: son emploi est favorable aux tuberculeux et peut guérir les estomacs irrités ou ulcérés. — Rayons de santé, 89 (1905).

615. Les olives peuvent être consommées à chaque repas avec de bons résultats. Elles remplacent avantageusement le beurre. L’huile d’olive combat la constipation; et pour les estomacs irrités, elle est bien meilleure qu’un médicament.
